Garlic & Chilli Prawns with Rusty Bus EVOO
A quick, vibrant dish that’s perfect as an entrée, tossed through pasta, or piled high with crusty bread to soak up every drop of flavour.
Ingredients (serves 2–3):
500g raw prawns, peeled and deveined
4 tbsp Rusty Bus Extra Virgin Olive Oil
3 cloves garlic, finely sliced
1 fresh red chilli, thinly sliced (or to taste)
1 tsp smoked paprika (optional)
1 tbsp lemon juice
Rusty Bus Lemon & Garlic Salt, to finish
Fresh parsley, chopped, to garnish
Method:
Heat the Rusty Bus EVOO in a large pan over medium-high heat.
Add the garlic and chilli, cooking gently for 1–2 minutes until fragrant (don’t let the garlic burn).
Add the prawns and paprika (if using), tossing well. Cook for 2–3 minutes until the prawns turn pink and opaque.
Squeeze over the lemon juice, then remove from the heat.
Sprinkle generously with Rusty Bus Lemon & Garlic Salt and finish with fresh parsley.
Serve immediately with crusty bread, rice, or pasta.
