Olive Oil & Apple Cake with Apple Cider Glaze

INGREDIENTS

2 cups peeled & grated Mouat’s apples

(Granny Smith or Pink Lady work well)

1½ cups all-purpose flour

½ cup almond flour (or more AP flour)

¾ cup sugar (adjust to taste)

½ tsp cinnamon

¼ tsp nutmeg

1½ tsp baking powder

½ tsp baking soda

¼ tsp salt

2 large eggs

½ cup Rusty Bus Extra Virgin Olive Oil

1 tbsp Rusty Bus Extra Virgin Olive Oil

(to mix with grated apples)

1 tsp vanilla extract

Zest of 1 lemon (optional)

DIRECTIONS

1.Preheat oven to 175°C. Grease and line a baking pan (23cm round or 20 x 20cm square).

2. In a large bowl, whisk flour, almond flour, sugar, cinnamon, nutmeg,

baking powder, baking soda, and salt.

3. In another bowl, whisk eggs, ½ cup olive oil, vanilla, and lemon zest.

4. Add grated apples + 1 tbsp olive oil to the wet mixture.

5. Combine wet and dry ingredients. Stir gently until just combined.

6. Pour batter into pan. Optional: sprinkle top with raw sugar or chopped nuts.

7. Bake 40–50 minutes or until a skewer comes out clean.

8. Cool completely before serving. Drizzle with cider glaze if desired!

APPLE CIDER GLAZE

1 cup powdered sugar

1½–2 tbsp Crafty Non Alcoholic Apple Cider

Whisk until smooth and drizzle over the cooled cake.
